Penne alla Vodka with Davide Originale Sauce

Ingredients
- 1 cup Davide Originale Tomato Sauce
- 340g (12 oz) Penne Pasta
- 8 oz Fresh Whipping Cream
- 2 oz Butter
- 2 oz Pancetta (similar to bacon)
- 1 cup Vodka
- Extra Virgin Olive Oil
- Reggiano Parmesan Cheese
- Black Pepper
Instructions

Prepare the Pasta:
- Start heating the water for the pasta in a pot.
- Choose a quality pasta and follow the directions for cooking time.
- Remember to salt the water.

Cook the Pancetta:
- In a heated fry or chef's pan (large enough to accommodate the cooked pasta and sauce), add a drizzle of olive oil, a tablespoon of butter, and the pancetta.
- Brown the pancetta and add freshly grated black pepper. Cook for a couple of minutes.

Flambé the Vodka:
- Add ½ cup of vodka to the pan and flambé.

Combine Ingredients:
- Add Davide Originale Tomato Sauce and fresh whipping cream to the pan.

Cook the Pasta:
- Cook the pasta until firm (al dente). Taste and drain while firm. Save some of the pasta water to put into the pan with the sauce.

Mix Pasta and Sauce:
- Add the pasta to the pan. Add a ladle of the pasta water to the pan and sauté (mix gently) over low heat for a minute.
- Taste and add more pasta water if needed.

Serve:
- Portion onto plates or into a serving platter.
- Sprinkle generously with Reggiano Parmesan cheese and garnish lightly with parsley.
- Add more black pepper if desired and a drizzle of olive oil.
Note: Any cream or cheese pasta dish should be served and eaten immediately and not be allowed to cool. Have your guests seated by the time you “butta giù” (throw down) the pasta into the pot to cook it.
