Gnocchi alla Sorrentina

Gnocchi alla Sorrentina is one of the most iconic dishes from the Campania region of Italy, known for its simplicity and delightful flavors. This dish, featuring tender potato gnocchi baked in a rich tomato sauce with mozzarella and Parmesan, is a perfect representation of the Mediterranean diet. While it’s popular worldwide, adding Davide’s premium sauce takes this classic recipe to the next level, enhancing the traditional flavors with a depth and richness that’s sure to impress.

Ingredients:

  • 1 kg potato gnocchi (homemade or store-bought)
  • 250g fresh mozzarella, cut into small cubes
  • 700ml Davide’s Sauce
  • 100g grated Parmigiano Reggiano
  • 12-16 fresh basil leaves
  • Extra virgin olive oil
  • Salt to taste

Instructions:

  1. Cook the Gnocchi: Bring a large pot of salted water to a boil. Cook the gnocchi in batches, dropping them into the boiling water and waiting until they float to the surface. This usually takes just a couple of minutes. Once they float, use a slotted spoon to transfer them to a large bowl.

  2. Prepare the Sauce: While the gnocchi are cooking, warm Davide’s Sauce in a large pan over medium heat. If you prefer a thicker sauce, allow it to simmer for a few minutes to reduce slightly. This will help the sauce cling better to the gnocchi.

  3. Assemble the Dish: Toss the cooked gnocchi with a few generous spoonfuls of Davide’s Sauce, ensuring each gnoccho is well-coated. Divide the sauced gnocchi into four individual oven-safe dishes or one large baking dish. Top with additional sauce, followed by a generous sprinkling of grated Parmigiano Reggiano and a handful of mozzarella cubes.

  4. Bake to Perfection: Preheat your oven’s grill (broiler) to high. Place the dishes under the grill for a few minutes, watching closely. You want the cheese to melt and turn a golden brown, with the sauce bubbling around the edges. This should take about 5-7 minutes, depending on the power of your grill.

  5. Serve Hot: Once the cheese is beautifully gratinated, remove the dishes from the oven. Garnish with fresh basil leaves and serve the Gnocchi alla Sorrentina hot, straight from the oven.
